ABOUT: The Nerello Mascalese grapes used in the making of this wine were grown in certified organic vineyards, utilizing organic & low-intervention farming methods. Vines were planted between 2006-2011, and the vineyards are situated 350M above sea level, where the soil is predominantly clay rich in calcarenite – a Limestone composite that is the carbonate equivalent of a Sandstone, and which imparts a distinctive minerality and pH to the wine, resulting in a delicious, and refreshing wine that will please the senses year round. Grapes were picked in the 2nd half of September, and 2,000 bottles were produced total.

VINIFICATION: This wine underwent primary fermentation in wooden barrels; 40% of the grapes used were whole cluster, 60% were de-stemmed. The wine then underwent malolactic fermentation, after which it was aged for 8-12 months in 100HL Stainless Steel vats. There was NO Clarification, and Filtration was done utilizing a 0.65 Micron filter: this wine is suitable for Vegans. 70 ppM of Sulfites were added to the wine only before bottling, not during any other stage of the winemaking. ABV: 13%

TASTING NOTES: Red Cherries, Raspberry, Plum, Blackberry & White Pepper, w/ hints of Cinnamon. Serve at room temperature, or with a chill to make this a refreshing summer red to pair with food, or to simply drink by itself.

FOOD PAIRING: This wine will go exceptionally well with Pastas in Red Sauce (especially Seafood Pastas), Pork, Poultry, and fattier Fish, such as Salmon, Tuna, Swordfish, etc. – especially off the grill.
