ABOUT: Soil type is made up of Clay-Limestone Kimmeridgian marls rich in fossils, including some small shells which testify to the presence of salt water in that area millions of years ago, which undoubtedly explains where the Chablis wines get their mineral, iodized character from. Average age of the vines is 40 years. This wine is made from several plots located around the Domaine, on slopes of various sun exposure.
VINIFICATION: Fermentation takes place in temperature controlled Stainless Steel vats. The wine undergoes complete malolactic fermentation, before it is aged for 18 months in Stainless Steel, on its fine lees.
TASTING NOTES: Golden color with Green reflections. This Med. bodied Chardonnay is fully expressive of the terroirs of the Chablis appellation, which give this wine a distinct mineral character, finesse and elegance.
FOOD PAIRING: Enjoy this wine as an aperitif, or Pair with Oysters and other Shellfish, Grilled Fish, Roasted Poultry, or Creamy Goat Cheese. Suggested Serving temperature: 10-12°C/50-54°F
