VINIFICATION: Extended, cool fermentations help maintain the acidity that makes our red wines well balanced and food friendly. Havenscourt reds are built around soft tannins, which dramatically increase the food pairing possibilities. Oak Barrel aging is used to add nuances of delicate Spice while softening the tannins and helping to ensure that each release is ready to enjoy when it leaves the winery.
TASTING NOTES: The Havenscourt Pinot Noir from California’s central coast is a fantastic, versatile wine that carries delicate flavors. Aromas of Red Cherry, Raspberry, Pomegranate & Strawberry, w/ hints of Spice & Vanilla. The palate is similarly driven by Raspberry, Cherry & Pomegranate, w/ hints of Tobacco & soft Tannins. Med. finish w/ notes of Licorice.
FOOD PARING: This wine will pair perfectly with Roasted Turkey, or Ham for the holidays, as well as BBQ Ribs, Smoked Brisket, Grilled Meats, or Fatty Fish like Tuna or Salmon. This wine will also pair well w/ Cured Meats & Cheeses.
